Carrot Cake Bircher
A delicious, light breakfast that fits in a 5:2 fasting day with ease.
20 g Rolled oats
1 Small carrot, grated
½ Medium apple, grated
1 tsp Slivered almonds (dry roasted for extra flavour)
1 tsp Pepitas (dry roasted for extra flavour)
1 tsp Raisins
1 tsp Coconut
200 ml Almond milk (unsweetened)
Cinnamon and turmeric to taste

Mix all ingredients together and soak overnight.

Serve as is on a fasting day or with a dollop of natural or greek yoghurt.
