 500 g Lean turkey mince
 1 Large brown onion, diced
 300 g Mushrooms, sliced
 1 Large zucchini, grated or diced
 1 Capsicum, diced
 1 Bunch kale or spinach, roughly chopped
 ¼ cup Diced black olives (optional)
 400 g Tin lentils, drained and rinsed
 400 g Tinned tomatos, diced
 2 Garlic cloves (or 2 tsp crushed garlic)
 1 tsp Oregano or preferred herb
 1 tsp Extra virgin olive oil

In a large saucepan or wok, cook onion, garlic and herbs in olive oil until onion is translucent and herbs are fragrant.

Add turkey mince and cook until lightly brown, Break up whilst stirring. Once browned, add mushrooms and continue to cook until softened.

Add remaining vegetables. Stir through diced tomatoes, lentils and olives. Season with additional herbs as desired.

Serve immediately or portion into airtight containers. Stores well in freezer. Buon appetito!
